Caribbean recipes from Busspepper food

It's no secret that the biggest part of any culture is food, a catalyst for socialising, family bonding entertaining friends and welcoming others to your environment. To invite someone to your bome from a meal is seen globally as a warm welcome and even better if your food is absolutely delicious, we're here to help!

In keeping with our theme of all things tasteful, presenting these culinary works of art, we bring you one of the UK’s top celeb chefs teamed up with the best the Caribbean has to offer (including our resident chef Hasan De Four).

Rum Glazed Pepper Steak

Ingredients

4 Fillet Steaks, cut into cubes

1 tsp. Salt

1 tsp. Black pepper

2 tbsp. margarine

2 tsp. hot pepper, minced

1 tbsp. Worchestershire sauce

1/2 cup sweet peppers, sliced

2 tbsp. chopped chive

2 cloves garlic, crushed and minced

3 tbsp. dark rum

1 tsp. honey

1 tbsp. chopped parsley

1/4 tsp. lime juice

Method Printable Version

1. Season steak with salt and black pepper

2. Heat 1 tablespoon of margarine in frying pan, and sauté garlic

3. Add steak and sauté steak for 8-10 minutes

4. While steak is cooking, melt honey and mix with rum. Set aside.

5. Remove steak from pan. Add remaining margarine, stir in hot pepper, Worchestershire sauce, sweet peppers, chive, lime juice, rum and honey.

6. Turn up heat, stir and cook for a few minutes, and adjust salt and pepper to taste.

7. Return steak and cook briefly over very high heat, stirring to coat meat in sauce.

8. Garnish with parsley
